Baked hearty cheese spaetzle

Ingredients for 6 servings:

  • 7 eggs
  • 600 g wheat flour
  • 250 ml water
  • 400 g cheese (Gouda), old, grated
  • 400 g cheese (Allgäu Emmental), grated
  • 1 kg onion(s)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika powder, hot

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 25 minutes

With well-seasoned onions and delicious cheese

For the dough, put the flour, eggs, and water in a bowl and whisk until the dough is free of lumps. Press the dough through a spaetzle press into a saucepan of boiling salted water. As soon as the spaetzle float to the surface, they are ready. Peel the onions, slice them, and fry them in a pan until crispy. Season the onions generously with salt, pepper, and paprika. In a large baking dish, alternate layers of spaetzle, onions, and cheese. The top layer should be cheese. Bake in the oven at 200°C (convection oven) for 25 minutes. A crispy layer of cheese should form on the surface.
