Baked leek rolls with Parmesan

Ingredients for 4 servings:

  • 4 stalk(s) leeks
  • 8 slices of cooked ham
  • 30 g butter
  • 30 g flour
  • 250 ml vegetable stock
  • 250 ml cream
  • 40 g Parmesan
  • salt and pepper
  • nutmeg
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Clean the leek, slice it lengthwise, and wash it. Cut it into 15 cm pieces and blanch it in boiling salted water. Remove it, drain well, and let it cool for a few minutes. Take a baking dish and grease it. Now preheat the oven to 160 degrees. Halve the ham slices and wrap them around the leek, then place the first layer in the dish. Melt butter in a small saucepan, dust with flour, and sauté lightly. Deglaze with vegetable stock and cream and simmer for a few minutes. Now grate the Parmesan cheese into the sauce. Season with salt, pepper, and nutmeg. Pour the sauce over the leek rolls and place the second layer on top. Bake in the oven at 160 degrees for about 15 minutes until golden brown. Serve with boiled potatoes.
