Baked meatballs

Ingredients for 8 servings:

  • 2 rolls, from the day before
  • 1 m.-sized onion(s)
  • 100 g dried tomatoes in oil
  • 1 kg minced meat, mixed
  • 2 eggs
  • 3 tsp pizza seasoning or tomato – mozzarella – salt
  • 3 tbsp oil
  • 3 m.-large tomato(s)
  • 250g mozzarella
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Soak the bread rolls. Peel the onion and drain the sun-dried tomatoes. Finely dice both. Knead with the minced meat, eggs, and squeezed-out bread rolls, 2 teaspoons of pizza seasoning, salt, and pepper. With moistened hands, form about 16 flat patties. Fry in 2 tablespoons of hot oil for 5-6 minutes per side. Wash the tomatoes. Cut the tomatoes and mozzarella into 16 slices each. Place the patties on a baking sheet lined with baking paper. Top each with 1 slice of tomato and cheese. Bake in a preheated oven (electric oven 200°C, fan oven 175°C, gas mark 3) for 8-10 minutes. Remove from the oven. Drizzle with 1 tablespoon of oil and sprinkle with 1 teaspoon of pizza seasoning. Serve with lettuce and basil. Serve with ciabatta.
