Baked Oatmeal Bars

Ingredients for 1 servings:

  • 120 g oat flakes
  • 20 g peanut butter
  • 3 dates, finely chopped
  • 80 ml milk of your choice (e.g. coconut milk)
  • some cinnamon
  • possibly nuts or desiccated coconut

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mix the first three ingredients in a bowl, then pour in the milk. Stir in a pinch of cinnamon. Drop the batter in small portions onto baking paper or place small portions (about 2/3 full) into prepared muffin tins. Bake in a preheated oven at 180°C (top/bottom heat) for about 15 minutes, depending on the desired consistency. Tips: Chopped raisins are also a good substitute for dates. You could also add nuts or desiccated coconut. I baked the cookies in heart-shaped molds; they’re great for gifting.
