Ingredients for 1 servings:

  • 100 g millet flakes
  • 100 ml buttermilk
  • 10 g chia seeds
  • 100 g apple, chopped
  • 2 drops of Stevia, or another sweetener or sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

In a bowl, mix the millet flakes with the buttermilk. Add the chia seeds, 6 tablespoons of water, and 2-3 drops of stevia. One drop has the sweetness of a sugar cube. Let the mixture stand for at least 20 minutes so the chia seeds can swell. I chopped the apple in a food processor. Add the small pieces to the mixture and stir. Place 12 cookie-shaped blobs on a baking sheet lined with baking paper. Bake at 180°C (convection oven) for 25 minutes. The edges should be lightly browned. These millet cookies are also delicious served warm!
