Baked or gratinated lettuce hearts

Ingredients for 4 servings:

  • 4 romaine lettuce hearts
  • 200 g bacon, thinly sliced
  • 2 tbsp Parmesan or other cheese, grated
  • 2 tbsp butter
  • some oil
  • salt and pepper

I usually put the hearts on a prepared casserole as a vegetable side dish

Clean and dry the lettuce hearts, leaving them whole. Season generously with pepper and salt (less so), including between the leaves. Wrap them in bacon slices and secure with string or toothpicks. Heat 1 tablespoon of butter in an oiled pan (medium heat) and slowly fry the hearts on all sides until the bacon is browned. This takes about 15 minutes. Sprinkle 1 tablespoon of butter over the hearts and place them in an oven preheated to 180°C (350°F) for about 10 minutes. Sprinkle with Parmesan cheese and bake for another 10 minutes.
