Ingredients for 4 servings:

  • 200 g flour
  • 5 eggs
  • 400 ml milk
  • some salt
  • 450 g spinach
  • 90 g Parmesan
  • 250 g low-fat curd cheese
  • pepper
  • nutmeg
  • basil
  • 200 ml cream
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pancakes with a twist

For the batter, mix the flour with salt and milk. Add the eggs and mix well. Cook 2 pancakes per serving from the batter. Sprinkle each side with 60g of Parmesan cheese. Cut the spinach into small pieces and sauté lightly in the pan. Season with quark, pepper, nutmeg, salt, and basil. Spread evenly over the pancakes and roll them up. Place in a greased baking dish. Pour over the cream and sprinkle with the remaining Parmesan cheese. Bake in a preheated oven (160°C fan oven) for about 15 minutes.
