Baked pork loin

Ingredients for 4 servings:

  • 1 large can of tomatoes, peeled,
  • 500 g pork fillet(s)
  • Oil, for frying
  • 1 bell pepper(s), green, cut into strips
  • 250 g onion(s), cut into rings
  • 250 g zucchini, quartered, sliced
  • 1 clove(s) garlic, finely chopped
  • 1 tbsp basil, chopped
  • 100 g cheese (Gouda), coarsely grated
  • 50 g Parmesan, finely grated
  • 1 cup crème fraîche
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Cut the pork fillet into approximately 2 cm thick slices and sear briefly on both sides in hot oil. Season with salt and pepper and set aside. Place the tomatoes in a sieve and chop them slightly. Pour the drained juice into the pan and braise the prepared vegetables with the garlic until the tomato juice has largely reduced. Season the mixture well and transfer it to a baking dish. Place the meat slices on top of the vegetables. Mix the crème fraîche with the Parmesan and basil and spread evenly over the meat slices. Sprinkle everything with the Gouda cheese. Bake the dish in the oven at approximately 200 degrees Celsius for 25 minutes. Serve with baguette or rice.
