Baked potato with broccoli

Ingredients for 4 servings:

  • 4 large floury potatoes
  • 8 slices of cheese (e.g. Gouda)
  • 1 broccoli

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wrap the washed and patted dry potatoes in aluminum foil, pierce the foil and skin with a fork (to prevent explosions in the oven), and place in the preheated oven (200°C). Bake for approximately 1 hour. In the meantime, wash and boil the broccoli and cook for 15 minutes. Then set aside. After the potatoes are baked, remove the aluminum foil, slice the potatoes lengthwise, and fill with broccoli florets. Top each potato with 2 slices of cheese and continue baking in the oven for about 5 minutes (or until the cheese melts). Variation: Microwave the clean, dried potatoes on high for about 15 minutes. Pierce the potato skins with a fork. Then wrap each potato individually in aluminum foil and let rest for 5-7 minutes. Then top the potatoes with the other ingredients as described above and either bake with the cheese in the microwave or place it on a grill to melt the cheese. Tastes good on its own or with meat and poultry.
