Ingredients for 4 servings:

  • 125 g oyster mushrooms, fresh, roughly chopped
  • 1 m.-sized onion(s)
  • wine, white
  • lemon juice
  • Salt
  • pepper
  • 1 egg(s), separated into white and yellow
  • 50 g sweet cream
  • Parsley
  • 25 g butter

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Chop the onion, heat 25g butter, sauté the diced onion until translucent, sprinkle in the oyster mushrooms, and season with salt and pepper. After a few minutes, add a splash of white wine and lemon juice and cook for 5 minutes. Butter a baking dish, beat 1 egg white until stiff, mix the egg yolk with the cream and parsley, and fold into the mixture. Fold in the beaten egg whites and bake at 200°C for 8 minutes.
