Ingredients for 4 servings:

  • 800 g potato(s), waxy
  • 50 ml olive oil
  • 1 tsp sea salt
  • Pepper, black from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Italian style

Wash the potatoes and boil them unpeeled (about 30 minutes). Drain the potatoes and let them cool briefly. Preheat the oven to 200°C. Once the potatoes have cooled slightly, gently press them down with the heel of your hand, flattening them just enough to crack the skins. Then place them in a shallow baking dish, drizzle with olive oil, and sprinkle with sea salt. Roast in the middle of the oven for about 30 minutes until golden brown. Remove the baking dish from the oven, season the potatoes with pepper, and serve. Goes well with herb quark or cream cheese dip.
