Baked potatoes with curry cream

Ingredients for 4 servings:

  • 50 g butter
  • 1 kg potatoes, small, new
  • Salt
  • 2 tsp turmeric
  • 2 tsp cumin
  • 1 tsp coriander
  • ½ tsp cayenne pepper
  • 1 pinch of nutmeg
  • 1 tsp cardamom
  • Pepper, white
  • ¼ liter vegetable broth
  • 400 ml cream
  • e.g. curry powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and place them in a buttered baking dish. Combine all other ingredients in a bowl and mix well. Pour the mixture over the potatoes. The potatoes should be roughly covered. Preheat oven to 200°C (400°F). Place the dish in the oven and bake for about 1 hour. Stir occasionally. This dish goes well with lemon garlic chicken.
