Baked potatoes with herring

Ingredients for 4 servings:

  • 4 large potatoes, each approx. 200 g
  • 250 g sour cream or crème fraîche
  • 1 onion(s)
  • 2 gherkins
  • 1 apple
  • 250 g herring fillet(s)
  • salt and pepper
  • dill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Wash the potatoes and wrap them individually in aluminum foil. Place them on a baking sheet. Bake in the center of an oven preheated to 200°C for 60 minutes. Finely chop the onion, slice the gherkins, and finely dice the apple. Cut the herring fillets into strips. Mix all ingredients with the sour cream. Season with salt and pepper. Stir in some finely chopped dill. Open the foil and slice the potatoes lengthwise with a knife. Spoon the sauce into the potatoes. Garnish with dill.
