Baked potatoes with salmon

Ingredients for 4 servings:

  • 4 large potatoes
  • 2 tbsp oil
  • 25 g butter
  • 100 g sour cream
  • 200 g smoked salmon
  • ½ bunch chives
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Pierce the potatoes a few times, dab them all over with a little oil, and bake in the oven until soft (at 180 degrees Celsius for about one hour). Cut off one of the lids and hollow out the potatoes slightly. Mix the insides of the potatoes with butter and sour cream until smooth, and season with salt and pepper. Fill the potato skins with the mashed potatoes, place them in a dish, and bake in the oven for another 15 minutes until lightly browned. Sprinkle with chives and serve on a plate with the salmon and a little honey-mustard sauce.
