Baked potatoes with spicy filling

Ingredients for 4 servings:

  • 4 large potatoes (baked potatoes, 300g each)
  • Salt
  • 40 g herb butter
  • 60 g Parmesan, grated
  • pepper
  • ½ bunch chives, cut into fine rolls

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Gourmet-style foil packets cooked in grilled embers

Boil the baked potatoes with their skins on in salted water for 40 minutes and let cool. Halve the potatoes lengthwise and scoop out the insides, leaving a 1 cm thick crust. Mix the potato mixture with the herb butter, Parmesan cheese, and chives, and season generously with salt and pepper. Spoon the mixture back into the potatoes, fold the potato halves together, and wrap in aluminum foil. Heat the potatoes directly over the coals for 15-20 minutes.
