Ingredients for 4 servings:
- 1 kg potatoes, floury
- 4 shallots
- 2 garlic cloves
- 1 bunch of basil
- 100 g tomatoes, dried in oil
- 50 g pine nuts
- 100 ml olive oil
- 1 tsp lemon juice
- salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
On hot days it is also very tasty as a main course, with a salad as a side dish
Peel the potatoes and boil in salted water, then drain. Sauté the finely chopped shallots and garlic cloves in 1 teaspoon of oil. Lightly brown the pine nuts in a nonstick pan without fat. Finely slice the basil leaves and sun-dried tomatoes. Add olive oil, lemon juice, salt, and pepper to the cooked potatoes and mash everything. Fold the remaining ingredients into the mash. If the mash is too thick, add a little olive oil. It tastes particularly good as a main course in summer with a mixed salad.
