Baked pumpkin slices with feta

Ingredients for 4 servings:

  • 1 butternut squash
  • olive oil
  • 200 g feta cheese
  • 1 onion(s), red, cut into rings
  • 1 jalapeño(s), sliced ​​into rings, optional
  • salt and pepper
  • Paprika powder
  • Herbs to taste

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cut the butternut squash into approximately 1.5 cm thick slices. Remove the seeds from the end. Peel the squash slices with a vegetable peeler. Rub the slices with olive oil, season with salt, and place on a baking sheet lined with baking paper. Preheat the oven to 200°C (top/bottom heat). Mix the feta cheese with a little olive oil, salt, pepper, herbs (if desired), and paprika until crumbly. Spread on the squash slices and garnish with onion rings. Jalapeños also work well as a garnish. Bake in the hot oven for about 30 minutes. A crisp leaf salad goes well as a side dish. The feta paste can be seasoned with herbs, spices, or tomato paste as desired.
