Baked red cabbage with feta

Ingredients for 4 servings:

  • 1 m.-large red cabbage
  • some salt and pepper
  • ½ lemon(s), juice
  • 4 tbsp olive oil
  • 100 g bacon cubes
  • 1 pack of feta cheese, approx. 150 – 180 g
  • 2 sprigs of thyme
  • 4 tsp honey
  • e.g. pomegranate seeds
  • e.g. pesto, homemade

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Cut the red cabbage into four slices, approximately 3 cm thick, and place on a baking sheet lined with baking paper. Season with salt and pepper, and drizzle with lemon juice and olive oil. Bake the red cabbage slices in a preheated oven at 160°C (top/bottom heat) for approximately 25 minutes. In the meantime, lightly toast the bacon cubes in a pan and then drain on kitchen paper to keep them crispy. Wash the thyme, shake dry, and remove the leaves. Then briefly remove the red cabbage from the oven and crumble the feta over the slices. Sprinkle both with the thyme leaves, then drizzle with honey and return to the oven for approximately 10 minutes. The feta should be lightly caramelized and golden brown. Serve the baked red cabbage slices with a little pesto, the bacon cubes, and, if desired, a few pomegranate seeds.
