Vegan vanilla soy milk pancakes

Ingredients for 1 servings:

  • 360 g flour
  • 1 tsp baking powder
  • 2 tsp apple cider vinegar or lemon juice
  • 360 ml soy milk (soy drink) or oat milk
  • 1 banana(s), pureed or other sweetener
  • 1 tsp vanilla extract
  • 15 g egg substitute
  • 1 pinch of salt

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

First, mix the soy milk or oat milk with the apple cider vinegar or lemon juice and set aside for about 10 minutes. In another bowl, prepare the egg substitute according to the instructions on the package. In a third bowl, mix the baking powder, salt, and flour. Then add the banana, the milk mixed with apple cider vinegar or lemon juice, vanilla extract, and the egg substitute and stir until well blended. Heat a pan over medium heat and add a quarter of the batter. When bubbles form, flip the pancake. When it is lightly golden brown, the pancake is done. You can decorate the pancakes with fruit, such as raspberries or strawberries, and vegan chocolate sauce.
