Baked sheep's cheese

Ingredients for 2 servings:

  • 2 tbsp tomato paste
  • 5 cloves garlic, at least (do not skimp)
  • 1 pinch of anise
  • 3 pinches of dill
  • 1 tsp rosemary
  • 1 tbsp broth, clear
  • 100 ml water
  • 10 ml olive oil
  • 400 g sheep’s cheese (slices, 2 x 200 g)
  • 1 onion(s), roughly quartered
  • 3 tomatoes, sliced
  • 2 peppers, cut into strips
  • 2 peppers (not so hot)
  • Olive oil until the bottom of the bowl is covered

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Puree the first 8 ingredients. Combine the remaining 6 ingredients in a shallow, ovenproof dish and add the puree, taking care not to pour it over the cheese. Preheat oven to approximately 180-200°C (350-400°F). Bake for 20-30 minutes. Caution! Do not let the cheese brown. Serve with flatbread or white bread. It’s best to serve each portion separately in a bowl, as the cheese can fall apart when scooping it out of a large bowl. Divide the ingredients accordingly.
