Baked shrimp with tomatillos and feta cheese

Ingredients for 4 servings:

  • 2 tbsp vegetable oil
  • 1 medium-sized onion(s), diced
  • 3 chili peppers (jalapeño), pitted, diced
  • 5 cloves garlic, finely sliced
  • 500 g tomatillo(s), diced
  • Salt
  • 150 ml dry white wine or fish stock
  • 500 g prawn(s), raw, peeled, but leave the tail on
  • 100 g feta cheese, diced
  • 1 handful of cilantro, chopped
  • 3 tbsp lime juice, freshly squeezed, more or less to taste
  • n. B. Black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 220°C. Heat the oil in an oven-safe skillet or roasting pan and sauté the diced onions and jalapeños for a few minutes over medium-high heat. Once the onions begin to brown, add the garlic and sauté for another minute while stirring. Now add the diced tomatillos, reduce the heat to medium, and simmer for 10 minutes. Add salt to taste, but be careful, as the feta and shrimp are also salty. Now add the white wine or fish stock and continue cooking until the liquid has reduced by half. Carefully add the feta cubes and gently fold in. Then gently fold in the raw shrimp. Bake in the oven for 10 minutes. Before serving, sprinkle with chopped cilantro, drizzle generously with lime juice, and season generously with freshly ground black pepper. Season to taste with salt, if desired. Rice goes well with it, but also just good crusty bread.
