Baked sweet potato

Ingredients for 2 servings:

  • 2 small sweet potatoes
  • 1 cup cottage cheese
  • 100 g pine nuts
  • some Parmesan, grated
  • e.g. salt and pepper
  • e.g. parsley
  • n. B. Herbs, Italian
  • chili if desired
  • 1 onion(s)
  • 1 clove(s) garlic
  • some olive oil

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel the sweet potatoes, cut them into 1 cm thick strips, and brush them thinly with a little olive oil. Bake in a hot oven at 160°C for about 10 minutes. In the meantime, roast the pine nuts (without oil) and then finely chop them (this works great in a blender). Peel the onions, dice them, and sauté them in a little olive oil. Season the cottage cheese, pine nuts, onions, and crushed garlic clove with salt, pepper, and spices to taste. Spread the mixture over the pre-baked sweet potatoes and sprinkle with Parmesan cheese. Bake in the hot oven until the surface has a nice, lightly browned crust (takes about 15 minutes, depending on the oven). I served it with a salad, but it also tastes good as a side dish.
