Baked sweet potatoes from the oven

Ingredients for 2 servings:

  • 2 large sweet potatoes
  • ½ pack of feta cheese or shepherd’s cheese, approx. 100 g
  • 1 spring onion(s)
  • 4 tomatoes, dried
  • 1 tbsp pine nuts
  • 2 tbsp olive oil
  • salt and pepper
  • n. B. Herbs as desired

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix salt, pepper, and herbs (if desired) with the olive oil. (Adjust the amount according to the size of the potatoes if necessary). Pierce the sweet potatoes all over with a fork and toss in the oil mixture. Now place the seasoned potatoes in a shallow baking dish and bake for 35–50 minutes at 200°C (top and bottom heat), depending on their size. A lot of sugar will be released from the potatoes during this time, but that’s nothing to worry about. Slice the spring onions into rings and chop the sun-dried tomatoes. Remove the sweet potatoes from the oven, halve them, and sprinkle with shredded feta cheese. Sprinkle the spring onions, tomatoes, and pine nuts on top and bake for another 10 minutes. Serve with herb curd cheese. My sweet potato weighed about 850g and baked in the oven for a total of 1 hour and 15 minutes. However, sweet potatoes are usually a bit smaller and therefore need less baking time.
