Ingredients for 4 servings:
- 4 medium-sized carrots
- 1 m.-large zucchini
- 300 g potatoes
- 1 tsp cinnamon
- 1 tsp cane sugar
- 4 tbsp olive oil
- 1 pinch of salt
- 100 g cheese (e.g. Gouda, Feta cheese etc.), grated
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash and trim the carrots and zucchini, and cut into strips about 1 cm wide. Dice the potatoes (unpeeled if you like). Place the vegetables in a bowl and toss with the olive oil, cinnamon, brown sugar, and salt. Spread the vegetables on a baking sheet. Bake in a preheated oven at 180°C (convection oven) for about 15 minutes. Sprinkle with cheese and bake for another 10 minutes. Serve hot. Goes well with fish dishes or as a main course, perhaps adding a little more vegetables.
