Baked tofu dumplings with tomato sauce

Ingredients for 4 servings:

  • 500g tofu
  • 2 onions
  • 2 garlic cloves
  • olive oil
  • 3 sprigs of mint
  • 10 sprigs of parsley
  • 2 stalks of basil
  • 30 g pine nuts
  • salt and pepper
  • 500 g tomato sauce
  • 50 g breadcrumbs
  • 40 g Parmesan, or vegan alternative

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Preheat the oven to 200°C. Chop the onions and fry them in olive oil. Chop the tofu and garlic and add them. Simmer until most of the liquid has evaporated; the tofu will take on a light roasted color. Chop the herbs, add them to the tofu mixture along with the pine nuts and spices, and puree everything. Depending on the moisture content and the shapeability, add up to 50g of breadcrumbs and knead. Form either 4 large or 8 small dumplings. Pour half of the tomato sauce into a baking dish, place the dumplings on top, and pour over the remaining sauce. Sprinkle with grated Parmesan cheese and bake for about 25 minutes. Serve with pasta or couscous and a salad.
