Ingredients for 2 servings:
- 2 zucchinis
- 2 eggs
- some flour
- 300 g Parmesan
- salt and pepper
- some parsley
Instructions

Slice the zucchini. Beat the eggs. Combine the flour and Parmesan cheese and season with salt, pepper, and chopped parsley. Coat the zucchini slices in the egg and breadcrumbs. Bake the breaded vegetables in a preheated oven at 180°C for about 15 minutes. A garlic or chive dip is ideal. Serve the baked zucchini with tomatoes or prunes.
