Baked zucchini boats with goat cheese and honey

Ingredients for 2 servings:

  • 2 zucchinis
  • 200 g goat’s cheese
  • 3 tbsp honey, lavender honey (alternatively forest honey)
  • Herbs de Provence, as desired
  • herbal salt
  • Pepper, ground

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Wash the zucchini, cut lengthwise, and cut into approximately 5 cm long pieces. Carefully hollow out these pieces, leaving a 0.5 cm thick edge. Cook the zucchini in boiling salted water for 4-5 minutes and then refresh in cold water. Mix the cream cheese with the herb mixture, pepper, and salt and fill the zucchini boats with it. Bake at approximately 175°C (convection oven) for approximately 15-20 minutes. The cheese should brown, while the zucchini remains just firm to the bite. Place a dollop of honey on each boat and serve lukewarm or cold.
