Baking: Currant Muffins

The perfect baking: currant muffins recipe with a picture and simple step-by-step instructions.

  • 250 g Flour
  • 2 teaspoon Baking powder
  • 2 piece Eggs
  • 150 g Sugar
  • 1 piece Vanilla pod scraped out
  • 100 g Butter
  • 150 ml Buttermilk
  • 1 pinch Salt
  • 250 g Red currants, stemmed
  • Some powdered sugar
  1. Let the butter melt. Add flour, baking powder, salt, sugar, vanilla pulp and eggs and stir.
  2. Now stir in the buttermilk and make a smooth dough that is difficult to fall off the spoon.
  3. Carefully fold in the currants and divide the batter into 12 paper cases (in a muffin tin).
  4. Approx. Bake for 30 minutes in a preheated oven at 160 degrees Celsius until light brown.
  5. Sprinkle with powdered sugar and enjoy.
