Baking: Currant Muffins
The perfect baking: currant muffins recipe with a picture and simple step-by-step instructions.
- 250 g Flour
- 2 teaspoon Baking powder
- 2 piece Eggs
- 150 g Sugar
- 1 piece Vanilla pod scraped out
- 100 g Butter
- 150 ml Buttermilk
- 1 pinch Salt
- 250 g Red currants, stemmed
- Some powdered sugar
- Let the butter melt. Add flour, baking powder, salt, sugar, vanilla pulp and eggs and stir.
- Now stir in the buttermilk and make a smooth dough that is difficult to fall off the spoon.
- Carefully fold in the currants and divide the batter into 12 paper cases (in a muffin tin).
- Approx. Bake for 30 minutes in a preheated oven at 160 degrees Celsius until light brown.
- Sprinkle with powdered sugar and enjoy.
