Baking: Fan Baklava

* for the dough / sauce

  • 80 ml Sunflower oil
  • 175 g Semolina
  • 200 ml Milk
  • 5 Eggs
  • 150 g Sugar
  • 2 packet Vanilla sugar
  • 1 packet Baking powder
  • 200 g Ground almonds

* for the syrup

  • 500 ml Water
  • 400 g Sugar
  • 2 tbsp Lemon juice
  1. First prepare the syrup. to do this, put sugar and water in a saucepan, bring to the boil, add lemon juice and cook for another 2 minutes. Then take it off the stove and let it cool down.
  2. In the meantime, prepare the dough by brushing a baklava pastry sheet thinly with oil, then sprinkling a thin layer of semolina on top. Now fold in a fan shape from the narrow side and then place on an oil-coated baking sheet.
  3. Sprinkle the remaining pastry sheets with oil in the same way, brush with semolina and fold up.
  4. Bake in an oven preheated to 180 ° C for about 10-15 minutes until golden.
  5. In the meantime, stir together the milk, eggs, sugar and vanilla sugar using a whisk. Finally stir in the baking powder.
  6. Now pour this liquid evenly onto the pastry sheets.
  7. Scatter the almonds on top.
  8. Put the tray back in the stove and bake for another 15-20 minutes until light brown.
  9. Take the baking tray out of the oven and evenly pour the syrup over the hot dough.
  10. Let it cool and let the syrup soak in.
