Ingredients for 1 servings:

  • 100 g frozen, ground oats
  • 200 g spelt – whole grain, ground
  • 100 g green spelt, ground
  • 100 g whole grain rye, ground
  • 1 pinch(s) of cane sugar
  • 1 tsp salt
  • 1 bag of baking powder (cream of tartar)
  • 1 tsp bread seasoning mix OR
  • Caraway, coriander, anise + fennel whole or ground
  • 450 ml mineral water, carbonated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Freeze the oats for at least 1 hour before grinding. Mix all the dry ingredients. Add about 450 ml of carbonated mineral water. Stir well on low heat for 5-8 minutes to ensure a nice crumb develops. Pour about 750 ml of water into a roasting pan. Place the dough in a small baking pan lined with baking paper or shape into a small loaf, score the dough, and bake. Since it’s not worth using the oven for this small loaf, I bake three loaves at once. After baking, brush the bread with hot water. Place in a cold oven and bake at 160°C fan-assisted oven for about 60-70 minutes. Test with a needle.
