Balinese Baby Ribs with Mashed Potatoes and Snow Peas

Ingredients
 

For the ribs:

  • 800 g Babyribs, US Trim
  • 1,5 liter Frying oil

For marinating:

  • 2 tbsp Baking powder
  • 1 tbsp Soy sauce, sweet
  • 2 tbsp Sambal Bangkok ala Siu

For the sauce:

  • 2 medium-sized Cloves of garlic, fresh
  • 15 g Ginger, finely grated, fresh or frozen
  • 500 g Tomato juice
  • 100 g Tomato paste
  • 50 g Sambal Bangkok ala Siu
  • 50 g Bbq sauce, smoky
  • 2 tbsp Honey, bright
  • Rest of the marinade
  • Salt and pepper to taste

For the side dishes:

  • 1 Port. Balinese mashed potatoes Sanur Beach
  • 120 g Snow peas, fresh or frozen
  • 2 tbsp Unsalted butter
  • 1 pinch Oregano, fresh or frozen
  • 2 tbsp Madeira, fortified wine
  • 2 pinch Salt and pepper to taste

Instructions
 

  • If you don't get baby ribs, take meaty spare ribs, divide them lengthways into individual rib segments and cut them into thirds crosswise.
  • Rinse off any bone splinters and dry well and sprinkle the fleshy sides with the baking powder. Mix the two marinating sauces and marinate the ribs with them. Cover and leave to mature overnight in the refrigerator.
  • Bring to room temperature the following day, strain, keep the stock for the sauce and pat dry.
  • Follow the recipe for the mashed potatoes. Wash the sugar snap peas, cut them off at both ends, pulling off the threads on both sides. Halve the larger pods crosswise, leave the smaller ones.
  • For the sauce, cap the garlic cloves at both ends, peel them and squeeze them with a garlic press. Wash and peel the fresh ginger. Grate the required amount on a fine grater. Weigh and thaw frozen goods. Add the remaining ingredients and mix well.
  • Heat the frying oil in a wok or deep fryer to 200 degrees. Brown the ribs in 4 portions until light brown, DO NOT deep-fry them and let them drain on paper towels. Put the sauce in a sufficiently large pan and add the ribs. Simmer with the lid on for 60 minutes. If you lose a lot of fluid, pour in some tomato juice and mix in.
  • 15 minutes before this time has elapsed, prepare the mashed potatoes and keep them warm. Put the butter in a small casserole, heat, add the snow peas and the remaining ingredients, mix well and season to taste. Simmer with the lid on for 3 minutes.
  • Spread the puree, the snow peas and the ribs with a little sauce on the serving plates, serve warm and enjoy.
