Gourmet Fillet with Mashed Sweet Potatoes and Snow Peas
The perfect gourmet fillet with mashed sweet potatoes and snow peas recipe with a picture and simple step-by-step instructions.
Gourmet fillet:
- 1 pack Gourmet fillet Bordelaise KNUSPER TK *)
Mashed Sweet Potatoes:
- 1 Sweet potatoes approx. 500 g / peeled approx. 475 g
- 1 Onion approx. 100 g
- 1 tsp Salt
- 1 tbsp Butter
- 4 tbsp Cream
- 4 big pinches Coarse sea salt from the mill
- 4 big pinches Colorful pepper from the mill
- 2 big pinches Nutmeg
Snow peas: (also called sugar peas!)
- 250 g Sugar snap
- 1 tbsp Sunflower oil
- 1 tbsp Sweet soy sauce
- 3 big pinches Coarse sea salt from the mill
- 3 big pinches Colorful pepper from the mill
Serve:
- 2 Vine tomatoes for garnish
Gourmet fillet:
- *) Cook Alaska pollack fillet in the oven according to the instructions on the package. Here: place undefrosted in the tray on the oven shelf. and cook at 225 ° C for about 35 minutes until golden-brown. Possibly the last few minutes with the grill function. Take out and cut in half.
Mashed Sweet Potatoes:
- Peel and dice the sweet potato. Peel onion and chop finely. Cook the sweet potato cubes with the onion cubes in salted water (1 teaspoon salt) for about 20 minutes, pour through a kitchen sieve, return to the hot saucepan and top with butter (1 tbsp), cream (4 tbsp), coarse sea salt from the mill (4th big pinches), colored pepper from the mill (4 big pinches) and nutmeg (2 big pinches) with the potato masher.
Sugar snap:
- Clean / remove the threads from the snow peas, wash, drain well and stir-fry in a wok with hot sunflower oil (1 tbsp) for about 2 minutes. Deglaze with ketchp manis (1 tbsp) and season with coarse sea salt from the mill (3 big pinches) and colored pepper from the mill (3 big pinches). Keep the sugar peas warm until ready to serve. The sugar snap peas should remain crisp or have a bite.
Serve:
- Divide the halves of the gourmet fillet on 2 plates, add the mashed sweet potatoes and the snow peas and garnish with a small tomato, serve.
