Ingredients for 1 servings:

  • 250 g almonds, ground
  • 1 tsp baking soda
  • 1 pinch of salt
  • 115 g butter
  • 2 tbsp, leveled agave syrup
  • 440 g banana(s), ripe to overripe
  • 2 eggs

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

gluten-free, low-carb

Preheat the oven to 180 degrees Celsius / Gas Mark 4. Lightly grease a loaf pan. Mix the almonds with the baking soda and salt. In another bowl, cream the butter until fluffy and stir in the agave syrup. Then combine the mixture with the almond mixture. Mix the mashed bananas with the eggs and then fold into the mixture. Pour the batter into the prepared loaf pan and bake for 60-65 minutes, until no batter sticks to the knife. This recipe can be adapted with nuts, raisins, dates, or fresh fruit. Baking in muffin cups will reduce the baking time.
