Ingredients for 1 servings:

  • 210 g flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of salt
  • 125 g butter, in cubes
  • 250 g sugar
  • 2 eggs, beaten
  • 3 banana(s), mashed with a fork
  • 100 ml buttermilk
  • possibly cinnamon

Instructions

Working time approx. 25 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 15 minutes

Mix the flour with the baking soda, baking powder, salt, and sugar. Add the butter, beat the eggs, and add the buttermilk. Mix everything together until a smooth dough forms. When the dough starts to come together, add the mashed bananas and continue stirring until everything is combined. Bake at 170°C in a greased loaf pan for 35-40 minutes. Let cool in the pan for 10 minutes. Serve with double cream and maple syrup.
