Brilliant sweet banana loaf – English recipe for a savory, sweet and delicious banana bread!
Preheat the oven to 175°C (350°F) fan/convection oven. It’s best to use an oblong loaf pan so you can cut rectangular pieces later. Grease the sides and bottom and then line with baking paper. This will prevent the baking paper from becoming brittle and will make it easier to remove later. Mix the butter and sugar until creamy and fluffy. Then add the eggs, baking powder, and gradually the flour. Only then add the bananas and mix. Pour the batter into the pan. Important: The bananas should be really overripe and soft. If they aren’t soft enough, mash them in another container first. Bake for about 30-40 minutes, checking every five minutes to see if the banana bread is firm enough on the inside – a toothpick, for example, should come out cleanly without sticking. Don’t worry if it feels soft on the inside; the bread will be very fluffy and tender. Don’t leave it in the oven for too long; the outside shouldn’t turn dark, just be golden yellow. After removing the bread, let it stand for at least 10 minutes. Tips: You can also use a whole packet of baking powder, which makes the bread very fluffy. If you’re still in the mood, you can prepare the bread like muffins or a cake, for example, by adding icing and banana chips. But the recipe is also wonderful without anything else. The bread stays fresh and fluffy for a long time and can also be frozen in smaller portions (2-3 cm thick slices) and thawed again in the microwave. When freezing, it’s best to cover it with a double layer of plastic wrap.
