Banana bread with apples and nuts

Ingredients for 1 servings:

  • 190 g spelt flour
  • 100 g oat flakes, fine
  • 100 g brown sugar
  • 15 g baking powder
  • 1 pinch of salt
  • 3 bananas
  • 5 tsp cinnamon
  • 3 apples
  • 110 g margarine or rapeseed oil
  • ½ lemon(s)
  • 150 g walnuts
  • Fat and flour for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease and flour a loaf pan. Slice the apples and toss them in a bowl with 3 teaspoons of cinnamon and the juice of half a lemon. Mix the dry ingredients in a bowl: flour, oats, sugar, baking powder, and salt. Mash the bananas and add them to the flour mixture along with most of the apples and margarine. Reserve a few apples for decoration. Chop the walnuts and add them to the bowl with 2 teaspoons of cinnamon. Mix everything together and pour into a loaf pan. Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for 45 minutes. Enjoy warm or cooled.
