Ingredients for 1 servings:

  • 50 g dates or figs or other dried fruits
  • 100 g pecans or almonds, hazelnuts etc.
  • 50 g ginger, candied
  • 3 banana(s), ripe
  • 100 ml sunflower oil
  • 75 g honey, maple syrup or apple syrup
  • 2 eggs
  • 100 g plain wheat flour
  • 100 g whole wheat flour
  • 1 tsp baking powder
  • 1 tsp nutmeg, ground
  • 1 tsp clove powder
  • 1 tsp cinnamon powder

Instructions

Working time approx. 5 hours 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 6 hours 20 minutes

Preheat the oven to 180 degrees Celsius. Grease the pan. Finely chop the dried fruit, nuts, and ginger. Mash the bananas finely with a fork. Mix the oil with the honey or syrup, the eggs, and the salt. Add the bananas and spices and mix well. Mix in the flour and baking powder. Fold the nuts and dried fruit into the batter. Pour the batter into the pan and bake in the oven for 50 minutes. Let cool. My favorite version is with hazelnuts, dates, and apple syrup!
