Ingredients for 1 servings:
- 3 bananas, very ripe (the darker the better), about 300 g
- 200 g whole wheat flour, alternatively rye flour, white flour, spelt flour
- n. B. Cinnamon powder (approx. 1/2 – 1 tsp)
- 100 g grated apple or sugar-free apple sauce
- ½ pack of baking powder
- 2 eggs
- 50 g walnuts, chopped, alternatively almonds, hazelnuts

Banana bread – super tasty, wholesome, healthy and wonderfully uncomplicated, also suitable for toddlers or as a snack
Peel, core, and finely grate the apple (alternatively, you can use applesauce without added sugar). Peel the bananas, add them to the apple, and mash well. Beat with the two eggs until frothy. Mix the flour, baking powder, and cinnamon, add to the banana-apple-egg mixture, and mix briefly but thoroughly. Finally, fold in the chopped walnuts and pour everything into a greased loaf pan. The larger the pan, the flatter the bread. Bake in a hot oven at 180°C (top/bottom heat) for about 45 minutes. Do the skewer test. The bread will rise well in the oven but will shrink slightly as it cools (like cheesecake, for example). The dough will remain rather “sloppy,” meaning it’s more compact than, say, cake batter. Be sure to let it cool thoroughly before slicing! Baked this way, one of 12 slices has about 127 kcal. The entire loaf has about 1524 kcal. Tips: The bread will keep in a tin for about a week and, in my opinion, tastes even better when soaked than fresh. Freezing also works very well. If you prefer it lukewarm, you can simply microwave the slices briefly before eating. Variations: You can also bake the dough in a springform pan or muffin tin (baking times may need to be adjusted slightly) and enjoy it as a cake. If the dough isn’t sweet enough, you can add honey or syrup, for example. After it has cooled, you can also cover the bread with chocolate coating, for an even more cakey flavor. Chocolate chips in the dough also work very well, although this will obviously be less healthy. If you prefer to bake with fat, you can replace the apple (which replaces the fat here) with 60 ml of oil or 80 g of butter. Due to its composition, the bread is ideal as a birthday cake for small children or as a snack on the go, as there is no additional fat or sugar in the dough, making the bread very nutritious and also very tasty. I usually bake it according to the recipe and eat it lukewarm with a thin layer of chocolate cream.
