Ingredients for 4 servings:
- 500 g chicken breast fillet(s)
- 1 red bell pepper(s)
- 3 shallots
- 2 bananas
- 10 apricot(s), dried
- 2 cm ginger
- 1 can coconut milk
- 1 bunch basil, fresh
- 1 tsp coriander
- 1 tsp cinnamon
- salt and pepper
- oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the meat into strips, roughly dice the bell peppers and shallots, and finely chop the ginger. Sauté everything in a large pan or wok in a little oil. Deglaze with coconut milk, add the diced apricots and sliced bananas, and season with cinnamon, ground coriander seeds, salt, and pepper. Finally, stir in the freshly chopped basil and serve with rice.
