- 1 tbsp lemon juice
- 1 egg(s)
- 150 g brown cane sugar

Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
makes 20 pieces
Preheat the oven to 180°C. Peel, chop, mash, or puree the bananas, and mix with the lemon juice. Beat the egg until frothy. Gradually stir in the brown sugar, vanilla sugar, butter, milk, and banana puree. Sift the flour, cocoa powder, and baking powder, mix, and fold into the egg mixture along with the salt. Be careful, don’t be alarmed: the batter should be lumpy (due to the bananas). Then pour the batter into a muffin tin or paper baking cups (it’s best to stack two cups on top of each other) and bake in the preheated oven for 20-25 minutes.
