Banana chutney

Ingredients for 1 servings:

  • 2 bananas
  • 2 tbsp rum
  • 1 pinch of cayenne pepper
  • 1 tbsp, leveled butter
  • 80 g onion(s)
  • 100 g sugar
  • 1 tsp lemon juice (lemon essence)
  • ½ tsp turmeric
  • ½ tsp curry powder, sweet
  • ½ tsp ginger powder
  • ½ tsp lemon zest or better
  • Lemon peel, untreated, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the bananas and onions into small cubes. Bring all ingredients to a boil in a saucepan, then reduce the heat and simmer for about 20 minutes, until the mixture begins to thicken slightly. The bananas should be almost cooked through. When it’s thick enough, ladle the mixture into twist-off jars while still hot, immediately seal, and turn upside down. It goes well with poultry.
