Banana cookies

Ingredients for 1 servings:

  • 2 bananas
  • 1 tbsp honey
  • 100 g oat flakes, fine
  • 1 egg(s)
  • 1 tbsp cinnamon
  • 1 bottle of vanilla flavor, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Preheat the oven to 175°C (top/bottom heat). Mash the bananas in a bowl and stir in 1 tablespoon of honey. Separate the egg. Mix the egg yolk directly into the bananas. Beat the egg whites until stiff. Gradually mix the oats into the bananas. When the oats and banana form a mixture, fold in the stiffly beaten egg whites. Then add 1 tablespoon of cinnamon. Optionally, add the vanilla extract. Place the cookie dough in any sized heaping spoons on a baking sheet lined with parchment paper and press flat. Decorate with fruit, nuts, or chocolate, if desired. Bake for about 15 minutes. When pierced with a fork, the holes should still be visible. Enjoy warm!
