Banana ice cream with carob and mint

Ingredients for 4 servings:

  • 2 bananas, fully ripe
  • 100 ml milk (skimmed milk)
  • 2 tbsp peanut butter
  • 1 pinch of salt
  • 1 tbsp carob
  • 2 tbsp mint, very finely chopped
  • some mint for decoration

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Peel the banana and chop into large pieces. Place it in a blender with the milk, peanut butter, salt, and carob powder and puree thoroughly. Freeze the mixture in an ice cream maker. Add the finely chopped mint at the very end and fold in gently. To serve: Twist off a scoop of ice cream and place it in a chilled glass, garnishing with mint leaves.
