Ingredients for 3 servings:
- 2 bananas, ripe
- 4 pitted dates
- 1 egg yolk
- 100 ml milk
- 100 ml cream

Peel the bananas and puree them together with the dates and egg yolk in a blender (or use an immersion blender) for a few minutes. In the meantime, combine the milk and whipped cream in a small saucepan and bring to a boil. Pour the hot liquid into the banana puree, stirring constantly. Pour the mixture into an ice cream maker and prepare according to the machine’s instructions. If you don’t have an ice cream maker, you can pour the mixture into a bowl and chill it in the freezer. The mixture needs to be stirred vigorously every 60-90 minutes until the ice cream is firm and creamy. The ingredients yield approximately 300 ml of raw mixture or approximately 500 ml of ice cream.
