Banana-Kiwi Muffins

Ingredients for 1 servings:

  • 100 g butter or margarine
  • 120 g sugar
  • 1 packet of vanilla sugar
  • Lemon peel, grated
  • 1 pinch of salt
  • 5 eggs
  • 180 g flour
  • 1 tsp baking powder
  • 50 g hazelnuts, ground
  • 1 small banana(s), firm
  • 1 kiwi(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 200°C. Cream the butter with sugar, vanilla sugar, the zest of half a lemon, and salt until fluffy. Beat in the eggs. Mix the flour, hazelnuts, and baking powder and stir in. Dice the banana and kiwi and fold in. Pour the batter into a greased 12-hole muffin tin and bake in the hot oven for about 25 minutes. Let the muffins cool for 10 minutes, then remove from the tin and let cool on a wire rack. Decorate as desired. The calorie information refers to one 12-hole muffin.
