Ingredients for 6 servings:
- 400 g lentils
- Salt and pepper, freshly ground
- 45 ml oil (sunflower oil)
- 1 onion(s), chopped
- 1 bell pepper(s), finely chopped red
- 1 tbsp garlic, crushed (15ml)
- 3 banana(s), sliced
- 60 ml balsamic vinegar
- 3 tbsp coriander, fresh (chopped)
- 2 tbsp fresh parsley (chopped)
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Banana Lentil Salad
Rinse the lentils and cook until tender, adding salt toward the end of the cooking time. Drain the water and let the lentils cool. Meanwhile, cook the onions, bell peppers, and garlic in the oil. Add the other ingredients and mix gently to avoid mushy bananas. Season with salt and pepper. Can be eaten hot or cold.
