Plantain vegetables with cashew nuts

Ingredients for 3 servings:

  • 2 bananas (plantains), ripeness doesn’t matter
  • 1 small onion(s)
  • 1 handful of cashew nuts, unsalted or rinsed
  • 1 tsp curry, mild
  • 1 tsp broth
  • 3 tsp oil (walnut oil)

Working time approx. 20 minutes; Total time approx. 20 minutes

Plane tree vegetables

Cut off both ends of the plane trees, score them, and peel them like an orange. If the skin is too tough, simply use narrower strips. The fruiting bodies are then cut into centimeter-thick slices and fried in oil with the diced onions. Be careful, plane trees burn extremely quickly and need to be stirred constantly. When the onions turn brown, add a cup of water, broth, curry, and the nuts. Let the whole thing simmer over low heat for 8-10 minutes. The vegetables can be varied to suit Indian or African tastes. However, the plane tree flavor is quickly lost. If cooked for too long, the plane trees will disintegrate, turning into a sauce.
