Ingredients for 1 servings:
- 3 bananas, very ripe
- 150 g margarine
- 3 eggs
- 80 g sugar
- 100 g almonds, ground
- 100 g flour
- 70 g oat flakes
- 2 tsp cinnamon powder
- ½ tsp clove powder
- 2 tsp, heaped baking powder
- 100 ml orange juice
- 2 cups whipped cream
- 2 packs of cream stiffener
- 1 packet of vanilla sugar
- some speculatius
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 15 minutes
for about 20 muffins; very Christmassy
Mash the bananas with a fork. Beat the margarine and sugar until fluffy and beat in the eggs one at a time. Roast the almonds in a dry pan until golden brown. Mix the almonds, flour, oats, spices, and baking powder and stir into the batter. Stir in the orange juice and bananas. Divide the batter between muffin cups and bake in a preheated oven at 170°C for about 25 minutes. Then let cool. Whip the cream with the cream stabilizer and vanilla sugar until stiff peaks form. Crumble the speculatius biscuits and fold in. Sprinkle the cream in small clouds on the cooled muffins.
