Banana nut muffins with cranberries

Ingredients for 1 servings:

  • 2 bananas
  • 2 eggs
  • 3 tbsp flour
  • 1 ½ tsp baking powder
  • 100 g chocolate shavings or chocolate drops or similar
  • 150 g nuts (e.g. trail mix, nut mix, walnuts, …)
  • n. B. Dried fruits (e.g. cranberries, raisins, cherries, …)
  • 1 tbsp sugar, depending on the sweetness of the bananas
  • possibly icing

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Very tasty and quick to make. Makes 15 pieces.

Mash the bananas and whisk with the eggs. Sift the flour with the baking powder and mix with the banana and egg mixture. Now finely chop the nuts and dried fruit and add them to the chocolate. Depending on the ripeness of the bananas, add more sugar. Place in the oven and bake for 20 minutes at 180°C. If you like, you can top with a glaze, but I prefer them without.
