Banana oat cookies

Ingredients for 1 servings:

  • 300 g oat flakes, wholegrain
  • 100 g raisins or other dried fruits
  • 150 g low-fat yogurt or apple sauce
  • 2 bananas
  • 3 eggs, separated
  • 1 pinch of salt
  • ½ tsp baking powder
  • e.g. Stevia
  • e.g. cinnamon powder or vanilla or flavoring of your choice

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Beat the egg whites with a small pinch of salt until stiff peaks form. Make a batter with the egg yolks, bananas, baking powder, yogurt, cinnamon, and stevia. Now fold in the beaten egg whites. Then carefully stir in the oats and raisins. Place small blobs on a baking sheet and bake at about 180°C (top/bottom heat) for 15-25 minutes (this depends largely on the size of the blobs). This snack has about 2.8 BE per 100 grams. Instead of cinnamon, the cookies are also delicious with vanilla or other flavorings. The raisins can also be replaced with any dried fruit. If you are lactose intolerant, you can use applesauce or grated apple instead of yogurt.
